I remember the days of eating Thanksgiving leftovers for days! Grandma remixing the various items that remained from the big feast. One thing that I was always looking forward to was the turkey salad that she made a day or so later. Well it been over 12 years since I consumed turkey but I have a comparable, scratch that better alternative, CHICKPEA SALAD!
Not only is it good you and that planet, it taste great, comes with black grapes and you can eat it all year around! Below is the recipe:
3 1/2 cups cooked chickpeas
1 1/2 tsp poultry seasoning
1 Tbs dried sage
1/4 tsp sea salt
3 stalks of celery diced
1/2 cup veganaise
2 Tbs lemon juice
2 Tbs mustard
1 Tbs agave nectar
1 tsp celery salt
1 cup halved seedless black grapes
-Pulse chickpeas, sage, poultry seasoning and salt in food processor just until crumbly.
-Transfer to owl an stir in celery, veganaise, lemon juice, mustard, agave nectar, celery salt.
-Season with salt, pepper and fold in grapes.
Enjoy on your favorite bread or with crackers
